Fun in the Sun – Wknd Recap.

Happy Monday to you! How was your weekend? Let’s get caught up!
My weekend was filled with some fun in the sun, teaching back to back dance classes (LOVE) and catching up with friends old and new! Friday night I went out with the boyfriend and some good friends of ours. Took some snapshots with the girls. Good times as always.
It had been a long time since I’d been out on a Friday, as most of those nights are dedicated to getting some shut eye so I can be up early for a Saturday long run with my running group. Saturday morning, I slept in. Unheard of, right? It was soo nice. Then I had to teach Danceaton at the 24 Hour Fitness Irving gym at noon. We have been getting ready for our big flash mob which will be next weekend!

After I taught dance of course I had to squeeze in my plank-a-day. Eric decided to join me in my endeavor. Couples that plank together stay together, isn’t that the saying!?
I also decided I wanted a hair upgrade this weekend. So my stylist Lydia highlighted my hair! I am already loving the sun streaks. Much needed update.
 
Saturday night boyfriend and I went to one of the newer services at my church. Can I just say that church on Saturdays is such a genius idea? I love being able to have my entire day free on Sundays knowing you have gone to church the night before. We had a little date night on Saturday night and went to see the movie ‘Think Like a Man’. Go see it, by yourself, with girlfriends or with your man! GREAT movie to strike up a conversation!
Sunday I went to Gaby’s Danceaton class at the gym, then hung out at the pool and went to a bbq.
It was such a beautiful day to bask in the sunshine! I brought over some of my famous skinny buffalo chicken dip to the pool with Texas Rangers style blue & red tortilla chips.
 
This week I will be doing more cross training (teaching dance class again tonight) and just may sneak a run in this week somewhere! Thursday is my birthday so I just may make it my comeback BIRTHDAY RUN. Stay tuned!

Leap Day Run & Skinny Buffalo Chicken Grilled Cheese.

Happy Leap Day! Well, I can definitely say it is beginning to look like spring here in Texas! My run today was nothing but straight sunshine. Even the flowers are beginning to bloom. That is one of my favorite things about the first signs of spring…seeing all of the beautiful flowers appear out of nowhere.
So last night after an INTENSE 2 hour Bodypump / Turbokick session (sometimes I wonder why I do things like that to myself – oh but it hurt so good, I am sore today) I came home to make a recipe I found off of Pinterest. As of late I have been obsessed with anything with buffalo chicken in it. My friend Jessica made this amazing buffalo chicken dip at the mardi gras party on Sunday and from then on that has been all I could think about. And then I saw a recipe for buffalo grilled cheese. Oh my. Too good NOT to make, right? So I decided to whip some up, skinny style. It was so tasty! Here’s the lowdown:

Skinny Buffalo Chicken Grilled Cheese Sandwich

All of the flavors of buffalo chicken wings rolled up into a golden brown grilled cheese sandwich.

Servings: makes 1 sandwich

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients
  • 1/4 cup cooked shredded chicken, warm
  • 1 tablespoon hot sauce (used Frank’s Hot Wing Sauce, it’s your secret weapon)
  • 2 wedges laughing cow light swiss cheese
  • 1 tablespoon chopped celery
  • 1 tablespoon green or red onion, sliced or diced
  • 1 tablespoon blue cheese, room temperature, crumbled
  • 1/4 cup cheddar cheese, room temperature, grated
  • 1 tablespoon I Can’t Believe it’s Not Butter
  • Nature’s Own Honey Wheat Bread
Directions
  1. Mix the chicken, hot sauce, laughing cow, celery and onion in a small bowl.
  2. Butter the outside of each slice of bread, sprinkle half of the cheeses on the inside of one slice of bread, top with the buffalo chicken salad, the remaining cheese and finally the other slice of bread.
  3. Heat a non-stick pan over medium heat.
  4. Add the sandwich and grill until golden brown and the cheese has melted, about 2-4 minutes per side.
