My day started bright and early in the office…the gym office that is. Schwinn water bottle, Pearl izumi cycle shoes, and Rock n Roll marathon bag in tow.
I taught my 5:45 am spin class and then hopped on the treadmill to knock out a quick run for the day.
Got it all done before 8 am and then headed home to get ready for work. Thankfully this gym is nice and close to home so I get to go home and get ready for work instead of showering at the gym. Since I’ve started teaching early mornings I still haven’t quite gotten used to showering and getting ready for work at the gym…I know I will eventually, but for some reason it’s always nice to have time to be able to go home and get ready.
I was reading Fitnessista’s confessions of a group fitness instructor and it had me cracking up…I am so very guilty of a lot of those things. Especially making up workouts in my car…that’s where I make up some of my best choreography. In traffic.
Speaking of being busybusy on the go…and really not having time to eat or cook…I have a fun recipe to share with you I stole from pinterest…it’s perfect for those days you are just lazy and want to throw something together. You can even eat it on a paper plate if you’re extra classy like me.
Pizza Quesadillas
What you need:
Hormel’s Turkey Pepperoni
1/2 c. of part skim shredded mozzarella cheese
1 small can of tomato sauce
Some crumbles of goat cheese (I don’t really measure this…and I use GOAT cheese not feta…it tastes so much better to me)
Garlic powder
Mission Lo Carb flour tortillas
Heat your skillet on medium. Put a little bit of extra virgin olive oil in the pan. Lay down two flour tortillas and spread tomato sauce on both of them. Sprinkle the tomato sauce with a dash of garlic powder. Put your mozzarella cheese on top of tomato sauce. Top with a few slices of pepperoni on each tortilla, then goat cheese.
Fold the tortilla shells in half and then cook each one in the skillet til nice and crispy. Cut each tortilla in half to make quesadillas. Voila! Tasty and less calories than regular pizza. Holla! Serves one.
Anything you want to confess today? Is anyone celebrating National Taco Day!!? What is your go-to meal when you are busy busy on the go?

I love the spin then run routine. I used to do it all the time when I was doing more triathlons but sadly I don’t make it in to spin much anymore (it actually hurts my knee more than running does…strange I know. I think it is the repetitive motion and angle my knee bends over and over). Do you know what I love right now? I get the frozen butternut squash from the grocery store, throw it in the microwave then put some Splenda and cinnamon in it. MMm it’s so good
Yeah it is a lot like tri training, so true! Thankfully I have been doing spin for years so for me…it’s a great compliment to my marathon training. AND the good thing about teaching is if I don’t feel like spinning with the class I just get off the bike and coach! Hmm…butternut squash sounds good! I have been finding recipes for that…will have to start making some.
I had fajitas for lunch…does that count? Haha. That quesadilla looks great…except the cheese part
oh yeah…forgot about you not liking cheese…you and my boyfriend both…don’t know how you do it! and yes fajitas count in my book!!
I love the idea of a confessions post! Do you mind if I use that idea for a post in the new few days or so?
I can’t believe you can crank out a spin class and a 5 miler before 8am… go you!
Um YES of course you can! Looking fwd to reading your confessions
any kind of melted cheese is just plain delicious.
Right?! I like how you think
Holy move over pizza rolls! Looks so delish.
I use to hit up in the gym in the morning to avoid traffic. You’re so lucky you get to head home and not use the gym shower, seriously:)
It is nice on Weds…Mondays I teach close to work so I have to use the showers and it’s not fun!
Wish I could do more after my class but mine ends at 7:45pm and the daycare closes at 8. So I at least try to do push-ups and sit-ups at home before putting my daughter to bed! I have definitely made up workouts on the fly. A couple weeks ago I thought no one would show because it was the first REALLY nice week of mild weather after a hot and steamy summer. So I went in figuring I’d wing it, but sure enough 15 people showed up. So I cherry-picked from a few different playlists to put my routine together literally 5 minutes before class started
I love at home workouts! I do strength training workouts in my living room all the time. Oh, and glad I am not alone on making up routines on the fly
YUM tortilla pizza, I loveeee tortilla’s, I swear you can stick anything in those things and create a delicious meal anytime of the day.
I know I’ve got some confessions I just can’t think of any at the moment
I hope you are having a wonderful Thursday…it’s almost the weekend! weeeeee!!!
xoxo!
Woot woot! Gonna be a fun wknd for you too!!
I love this quesadilla idea! And great job on teaching and class AND getting a run in! You’re a rock star!
Aww, thank you!
You will love the quesadillas, they are tasty.
